Why goat's milk?
In contrast to cow's milk, goat's milk forms bases. Thus it contributes to the acid-base balance and is highly valued by nutrition-conscious consumers as a healthy drink and milk base for porridge (also mashed potatoes, rice porridge etc.).
Why is goat's milk so well tolerated?
The protein of goat's milk is compared with that of mother's milk because it has the property of flocculating in smaller and lighter particles than the protein of cow's milk.
Since the fat globules are also smaller, goat's milk is preferred by people with sensitive stomachs and is used to produce baby food based on goat's milk.
Furthermore, goat's milk contains more whey proteins and nitrogen-containing non-proteins than cow's milk. Especially striking is the high content of free peptides and amino acids compared to cow's milk.
Goat's milk contains not only the provitamins of vitamin A (carotene), but also the finished vitamin A.
Goat's milk is clearly better tolerated than cow's milk:
- The essential characteristic of an allergenic protein is its resistance to digestion. It is known that the beta-lactoglobulin of cow's milk is 50 % more resistant than that of goat's milk. A clear proof for a significantly higher allergenicity of cow's milk.
- It is also known that 43 % of the highly allergenic protein alpha-S1-casein is found in cow's milk, but only 3 % in New Zealand goat's milk.
However, the fact that the highly allergenic casein of cow's milk differs considerably from that of New Zealand goat's milk is probably more decisive for the significantly better tolerability.
That is why our products from Dairy Goat are not certified organic:
The goats are free-range grazing animals that feed exclusively on the juicy grasses and herbs of the extensive New Zealand pastures. Only in the New Zealand winter is hay fed in addition.
A biological certification according to European guidelines would not improve the quality of milk in any way and would not change the way goats are kept, but would make the milk price significantly more expensive. Due to the EU's punitive tariffs on imported dairy products of over 20% (!), we have decided not to make this natural product unnecessarily more expensive through certification.
