Since vitamin B12 (cobalamin) is a very sensitive and water-soluble vitamin, it can easily be destroyed by long storage times and cooking, so food handling should be very gentle.

In addition, vitamins can normally be absorbed directly by the intestine - the only exception being B12. In order for the B vitamin to enter the blood via the intestinal mucosa, it requires a special protein: intrinsic factor (IF).
Unfortunately, older people naturally produce less and less of this protein, so that the body can absorb less and less vitamin B12 as a result. The lack of intrinsic factor is probably the most common cause of inadequate vitamin B12 supply.
